With the most accurate temperature control in the industry, the Vollrath MPI4-1800S Medium-Power 4-Series commercial induction range is adjustable in one degree increments between 80 and 450 degrees Fahrenheit. Its easy-to-use control knob and touch-screen control panel make it easy to set the temperature, with just a spin of the dial bringing product to a boil or simmer. The dial can also set an exact temperature or power level; the latter allows the user to adjust the wattage from 1 to 100% watts.
Just place an induction-ready pot or pan on the range, enter the desired temperature, and the range creates an electromagnetic field that heats the pan without releasing heat into the air. An expanded magnetic field and improved pan detection technology maintain even, uninterrupted heat to make it easy to saute, adds ingredients, and flip the pan. Plus, it’s specially engineered to eliminate power cycling, which helps to steady heat output.
This particular range features a temperature control probe, which increases temperature accuracy by modulating the power output and maintaining the desired temperature. As a result, it prevents boil over, saving staff from having to clean-up a mess and restart a dish. In addition, the range can save up to 4 customizable programs, committing them to memory for immediate recall. Each program can have up to 3 stages too, so staff aren’t limited to saving simple instructions and one-step tasks. Using the timer also helps simplify use, as it stops heating when the time expires.
With a 90% efficiency rating, this range transmits more heat to the product and less to the environment and surrounding worksurface. Not only does this mean faster cooking; in fact, it boils water up to 20% faster than gas. It also means that less heat escapes to increase the ambient temperature of the kitchen or buffet. Inside, the range uses an easy-to-maintain cooling system to promote reliability.
The range is built with a stainless steel casing and a glass cooking surface. It’s equipped with power monitoring technology to account for voltage fluctuations, which often occur in busy kitchens full of equipment. The technology helps ensure consistent performance so that recipes are easy to repeat for maximum menu quality. A 120V electrical connection is required for operation.
